Recipe: Sesame Leaf Kimchi

Summary: Sesame Leaf Kimchi (kenip kimchi, 깻잎 김치) is a good side dish in summer. If you like fresh flavor of sesame leaves, you definitely should try this.

Sesame leaves kimchi

Ingredients

  • 40 fresh sesame leaves
  • Minced garlic 1T
  • thinly sliced Korean green pepper 1T
  • Soy sauce 1T
  • Chili powder 1T
  • Anchovy sauce 4T (You can get a bottle of anchovy sauce from any Korean grocery store)
  • Sesame oil1t
  • Sugar 1t

Instructions

  1. Mix all the ingredients in a bowl and make the sauce
  2. Place a leaf at the bottom of a container
  3. Spread the sauce on the surface of a sesame leaf
  4. Place 2 leaves on the top of the one you spread the sauce on and spread the sauce.
  5. Repeat Step 4 for all the leaves
  6. Close the container and keep it in the fridge for 1 day
  7. Serve them as a side dish

    This is one of kimchi dishes that one my Korean friends introduced to me first when he introduced me to Korean cuisine. It’s great to do and try it fresh.
