Summary: Bean paste soup is a very commonly served soup in Korean dining. Bean paste has high protein and spinach has full of good Vitamins.

Ingredients

  • Soup Base Anchovies 5
  • Korean Bean Paste (Dwanjang) 2 T
  • Minced Garlic 1t
  • Spinach 1/2 bundle
  • Diced tofu 1/2 cup

Instructions

  1. Boil 6 cups of water and add anchovy in a pot for 10 minutes and make anchovy soup
  2. Take the anchovies out.
  3. Add 2 T of Bean Paste in to the soup and boil it for 2 minutes.
  4. Add minced garlic, tofu and spinach to the soup and boil it for another 3 minutes.

Cucumber Kimchi

Recipe: Cucumber kimchi

Summary: Cucumber kimchi is one of favorite summer side dish. You can enjoy fresh cucumber flavour as well as tangy taste of kimchi.

Ingredients

  • 3 Cucumbers
  • 1/2 Bundle of Chives
  • 1T Minced Garlic
  • 1t Minced Ginger
  • 1T Chopped Green Onion
  • 2/3 Cup Korean Chili Powder
  • 1t Salt
  • 1T Sugar

Instructions

  1. Cut a cucumber in 4cm length
  2. Slit the cucumber without going through the end and make 4 slits.
  3. Add salt to water and boil water.
  4. Put the cucumbers in a large bowl and pour hot salty water in it.
  5. Take the cucumbers out from the bowl after 30 mins and dry them with a towel
  6. Chop chives into 1cm length.
  7. Add minced garlic, minced ginger, chilly powder, sugar, and salt to chives and mix them well in a bowl.
  8. Stuff the slit-cut cucumbers with the mix and stack the stuffed cucumbers in a container.
  9. Spread 5T of the salty water from Step 4 over the cucumbers.
  10. Keep the cucumber container outside in a room temperature for a day.
  11. Move it to the refrigerator and serve it cold.

Seafood Pancake

Summary: Last week, I bought a bag of Korean pancake powder, a bag of frozen seafood mix, and some green onions and made Korean seafood pancake (Pa Jeon). I found making Pa Jeon so much easier with this pancake powder.

Ingredients

  • 2 cups of Korean Pancake Powder
  • 1/2 cup of water
  • 1/2 of frozen seafood mix
  • Thin sliced green onions
  • 1t salt
  • Dipping sauce: Soy sauce with a little bit of vinegar

Instructions

  1. Make batter with pancake powder and water
  2. Add sliced green onions, seafood mix and salt
  3. Mix them well
  4. Add vegetable oil to a pan and heat it
  5. Spread batter on the pan and cook it in the medium heat
  6. Once the edge turns crispy, flip it and cook it until it turns golden.
  7. Serve it with soy sauce

Kimchi Noodle

Kimchi Noodle

Summary: Kimchi noodle is one of my favorite summer dishes. Feel the sweet and sour taste of Kimchi as well as refreshing taste of cucumber.

Ingredients

  • 1/3 Cup of chopped Kimchi
  • 1t sesame oil, 1T sugar (for Kimchi seasoning)
  • 1/4 Cucumber julienned
  • 1/2 boiled egg
  • Thin sliced beef 1/3 lbs
  • 1T soy sauce, 1T sugar, 1t sesame oil (to marinate beef)
  • Thin Korean noodle (So-myeon)

Instructions

  1. Mix 1T soy sauce, 1T of sugar, 1t of sesame oil and thin sliced beef in a bowl. Leave it in the fridge for 15 minutes.
  2. Add 1T of sugar and 1t of sesame oil to chopped Kimchi and mix them well.
  3. Boil water in a pot and cook noodles.
  4. Boil water and cook an egg.
  5. Peel off egg shell and cut it in half.
  6. Take the noodles out from the pot. Rinse them quickly with cold water and drain.
  7. Cook marinated beef on a heated pan.
  8. Put noodles in a bowl. Put beef, kimchi, cucumber and the egg on the top of the noodles nicely

Kimchi Fried Rice

Recipe: Kimchi Fried Rice

Summary: Kimchi is as delicious as it is. It also is a magic ingredient of other dishes. We make hotpot, soup, pancake, dumpling and many other things with Kimchi. Kimchi fried rice is so easy to make and quick to prepare.

Ingredients

  • Chopped Kimchi 1/3 Cup
  • Kimchi juice 2T
  • Cooked Rice 1 bowl
  • Sesame Oil 2t

Instructions

  1. Put oil in the pan and heat the pan.
  2. Add chopped Kimchi to the pan and cook for 2 mins
  3. Add rice to the pan and mix with cooked kimchi
  4. Add Kimchi juice to the pan and stir the rice on the pan until rice absorbs the juice.
  5. You can serve with an fried egg on the top of the rice
